Basically you're feeding carbon, whether it be alcohol, sugar, or vinegar, to spike the heterotrophs in the water column. On the theory that your tank is carbon limited, theae heterotrophs then grow and multiply, incorporating nitrogen compounds and driving down your available nitrates.
