just put 12 inches of soil in an aquarium and use one of your reef lights and grow everything inside
I have a 12ft bench with grow lights in the basement I filled with seedlings every year. I would keep what I wanted and give away sometimes 100's of tomato, pepper, and various other plants.

Growing them all indoor is a possibility, would be awesome to have fresh tomatoes in the winter.

Winter is hard because you need to add humidity. I normally stop for the coldest months.
