Kale has really grown (lol) on me. I hated it at first, and it seemed like such a hippie dippie fad thing. But my friend taught me how to make it tolerable. (Cook it, OR toss it in a bowl with olive oil, lemon juice, and salt and actually use your hands to moosh it all together -- it changes the texture AND makes it tolerable!) **at least in our experience haha
Maybe one more try... I struggle with it even cooked though.

Maybe one more try... I struggle with it even cooked though.
With any bitter green curry spices (eg. Cumin) or even just a pinch of generic curry powder and a healthy squeeze of citrus can really kick it up a notch. Aromatics like garlic ginger and onion play well together too

I really like curry; trying, and succeeding slowly to teach my wife to eat spicy food though.
Try Japanese style curry as a gateway drug, the French inspiration lends it well to milder sweeter bases but still carries that addictive mix of spices. Plus the premade roux blocks come in a range of spice levels so you can just sneakily up the spice level every once in a while lol

Japan does delicate flavor really well. I don't do it justice. I'm more the brute force thai curry type. Got the coconut to cool it a little, but you sure get it in the teeth. Pun almost not intended.
