I’ve been using a Blazn Grill pellet smoker for two years. Made some baby back ribs (3-1.5-1 method) last week and I am going to smoke a flat next weekend. I’ve become a believer in butcher paper to finish a brisket after 150F.

I have the rotisserie for my Weber Genesis. Normally just do chicken on it. I can't say I play with it too much.Anyone have the Weber rotisserie for the kettel besides me?

My Genesis gets the most use. My wife doesn't like smoked food. Her house was burned down when she was young so the smell of smoke brings back those bad memories. Weekends like this one where she is at the beach, I almost exclusively run the smoker. Wings on Friday, steak yesterday, and I'll cook up some babybacks today.I have and use a little Weber Spirit gas grill, but I still feel like I'm cheating on my kettle when I do.
I've only used the rotis. ring-insert on my kettle, so I don't know if/how it compares to those gas-equivalents.
But if you haven't thought of grilling a ham before (because why would you) then you should try it. Rotis. it, to be specific. (Assuming you like ham. )
Anyone here use a Himalayan Salt Plate? I've looked at them but not sure I want something else I have to take care of. I wish I could taste something cooked on one to see if I really like it.

Those ribs look excellent!I thought they looked good but 4 of the middle ribs may have been the best I’ve ever had.
