I believe peppermint shrimp need a mature system with more choices of food that exist in the system and possibly your system is to young to support them and the coral become easy picking or maybe mine or yours that was and is no longer is not a true peppermint shrimp.
Yes I agree with this.
I do try my best to research before I buy anything but honestly i think this 'True' 'peppermint' shrimp or not was the culprit, not due to lack of food/ variety
It just had a taste for my new mushrooms/ X 2, (first mushroom was completely demolished/Mia) and this 2nd purchase of same species was half eaten nearly demolished within 24 hours of introduction

I appreciate your help and I will make sure any new additions will be researched further :)
