Mine is brining in 4 gallons of apple cider with assorted herbs, spices, and of course, salt. Picked it up from the farm this morning at 8:00. 34 lbs. Currently in a cooler out on the deck.

Also made a giant pot of stock that I just strained. It's been going for the last 10 hours. I made the cranberries, too, and I have the last of the pies in the oven now. Pics of those to follow later. After that, I'm done until 0600 tomorrow.

Oaxacan cuisine is way underappreciated IMO. Their culinary tradition is no less rich or complex than the French.
