So collective brains. Since I know nothing about sumps and things, what is the desired water height for a sump? How much room/space do you need for water to backfill when the pump is off?

Top tank Aqueon 125g, 72Lx18Wx22H
Sump Aqueon 55g, 48Lx12Wx20H

Looking at the modular marine refugium kit with a water level fixed at 13". Should I look for an adjustable height one? Or will this work?

How much space do I need for the backflow water?

Depends on your plumbing, specifically how much water back siphons through the return outlets. But I find that the higher the water level, the quieter it is. I would set returns as high as possible(drill a siphon break), get it running and add water until it gets quiet.

Actually, if the tank never ran I would fill the display until the sump was about 2-3" from the top. Then start it and see what you got. The returns are key

First time with a sump SO I HAVE NO IDEER! Plumbing not set up yet, sump tank still bare, but trying to decide if the above kit will work in my situation before buying it.

I take it you didn't read my article... I'm slightly offended.

I'll let someone else speak to that. Both my sumps have been diy.
