Had me some venison backstrap for dinner. We had bagged a deer 2 days before the elk so we started processing that one today. So yummy. I'm hoping hubs will let me decide on both back legs, they'll be jerky if so. The problem with making lots into jerky is the fact that it's so good that we sit and eat it all in one sitting and there's none to save. Plus you lose about 2/3rds of weight during the smoking process so it takes a giant pile down pretty small. Then we gobble it up like we're starving. Then it's gone.
