it's better in brackish.I'm actually only in the freshwater hobby th make submerged cheese cultures.
when you get the curd, heat up some brackish water and pull the curd together in the water. pro tip, wear gloves so you don't burn your hands as much. roll it up in plastic wrap or cheese cloth and cool it off. et voila
