leftover homemade indian from @MrsBugmaster and her husband. then who knows for dinner. i am assuming some slathered meat for you?
Oh nice! My wife cooks curry sometimes but that's the extent of our Indian food intake.

No crazy meat situation today. Smoked burgers last night and ribs the two days before that. Not sure what's on the menu today....

My former neighbors across the street were big Ohio fans and even got their curb painted with the address and ohios logo. I thought about getting a Michigan one just so he’d have to see it everyday haha

Alright, so I couldn’t find one with burger pattys, but this tenderloin was cooked the same way. Gas burners get the wood chips going on a cast iron vegi tray, and once you have embers and smoke, cook from the shelf above the coals. It creates a very quick, natural smoked flavor with a lot of heat. You’ll need a squirt bottle to regulate fire because it will indeed catch fire eventually. Once you have you internal temp maybe 10-15 degrees off target, you can let the flames go a little bit. What it’s going to do is create a reverse seer effect.
