Two Radion XR15 G5 blue enough for 5 foot 130 gallon.

I’m wondering if 2 XR15 G5 blues is enough to start with for some lps and softies. After some time I will be adding a third one.

Yes, absolutely fine for lps/softies. They will appreciate more but should live with that.

It won't work well if you're using the tank mount, since its height is not adjustable. You will want to raise it higher to cover 2.5 ft width, otherwise the center will be visibly darker.

Hmm, haven’t thought about that. Although I was looking into the hanging mount they provide, so that wont be a problem
