Obviously not has good as hitting up H-Mart, but you can get the staples pretty regularly there.They sell the bones at the Asian shop. Even Wal-Mart sell it sometimes

I put the beef bones and veggie in my instant pot in broth mode for 40 mins. I let it the it vent the pressure by itself overnight. You're right, not worth for just 2 people, and it does take some work. I prefer to cook from scratch for family. That's why you would never find me buying instant pho in a bowl. Granted, I occasionally stop by for pho when we're out, but at only certain place where I know it's good. I'm just picky, and my girls takes after me. Hubby on the other hand is easy, but he doesn't complain. How long does it take to make the broth? I'm sure it's better to make it yourself, but with it just being my wife and me, we end up just buying a meal rather than cooking it a lot of times because it's too much work for just two people. Same reason I love CostCo but don't have a membership. Sure, the pork belly is great and cheap, but what are we going to do with 12 pounds of it? We just buy a little at a time as we need it so it's fresher. More expensive, but it works.

Oh we have a couple places near the house that make really good Pho. Houston has a very large Vietnamese population. My wife has been to a lot of countries, Vietnam included, and she said that we have her favorite Pho that she's ever had outside of Vietnam.
