BBQing Reefers - What's on your grill/smoker?

Anyone with a big green egg? I am remodeling my home, working on my backyard this summer, and really want to replace my 10 yr old weber charcoal grill. I really want a big green egg.
I love my Green Egg! Nothing better than cooking a ribeye very fast on a 800 degree pit. My whole life I used Kingsford Briquettes or split mesquite. Then I started having issues and found out I was allergic to mesquite. So when the wife added a pool I added a Green Egg using lump coal. I can't stand briquettes today and if I am bbqing a bunch I use split oak / peach / pecan in my big pit.

I been using pecan for the first time lately and love it, Peach is a new one. Any one try Jack Daniels wood chips?

Seems like I"ve tried them years ago, couldn't tell a difference other than paying more than I should. I personally use pecan and mesquite most of the time. Depends on what I'm smoking on which I use. I had stopped using pecan many years ago because my middle son is allergic to tree nuts and he got sick eating some the meat the first time I used pecan. When he got older I tried again and he didn't get sick so I"ve been using it ever since.

I also buy hardwood lump coal when I can find it. A couple of years ago Academy had some generic brand on sale for $1.99 a bag. I bought a couple thinking it would end up being junk. It actually was some the best I've used. Unfortunately I never saw it again there. I now try to buy the ones they carry that are shaped like miniature logs.

My son is supposed to be allergic to tree nuts tree pollen grass pollen and dust? he gets hay fever and runny noises but we live in a forest and he eats nuts all the time with no effect . any way Smoke a big one!

Do you have a good source for rockwood? I used to use it but my store dried up

I have an xl bge. I really love it. I use lump then split oak/apple/pecan/peach depending on the cook.

Get it at my local ACE hardware. The owner is a grillin fanatic. Sells the top 6 brands of lump charcoal!

That looks good! Never done Beef ribs, cook same as the pork Ribs? Hey I see you trim the St Louis before the grill? and no Rosemary leaves on the pork?

I cook them similarly but the take a little longer. 6 hrs as opposed to 5

I get the St. Louis pre trimmed if possible. I’m doing Kansas City style. I normally only use rosemary on a prime rib roast or turkey.

I do most of my smoking on a smoky hollow propane smoker. It's not huge so I can't do brisket in it but it kicks out wings, butts, center cut beef rounds, salmon, and bacon bombs like a champ. I also garbage picked a master forge that is big enough for brisket and racks of ribs so I'm totally set now. The wings and salmon are my wife's favorites, for the wings I rub them down with olive oil then season (not rub) with fresh ground sea salt, fresh ground black pepper, garlic powder, and paprika. Cover them and let them sit in the fridge for at least 12 hours and smoke them over hickory at 250 for about 2 hours. If the skin hasn't crisped up from that then put them under the broiler for about 5 minutes a side then enjoy. Salmon, I put it in a brown sugar and salt brine overnight, take it out of the brine, pat it dry then sprinkle with brown sugar cracked black pepper and ground sea salt. Smoke for two hours or until flaky at around 230/240*F and it comes out tasting like a honey baked ham.

My grill is old, the ash tray is rusting to pieces and the whole thing needs to be replaced... but it still cooks up a mean cowboy steak!
I got a very well made replacement ash pan for my grill at Amazon. It was good heavy gauge metal & reasonably priced . They had a bunch for all kinds of brands .
