Any simple crockpot recipes that cook in 10-12 hours? No soups...working mom trying to multitask.
When the family comes over and meat is a must this is an easy thing to make. Its a serve yourself when hungry type of dish.
Shredded Pork
1 pork blade roast- cut into maybe 3 big chunks so it can browned on all sides in the crock pot.
1 onion quartered
4 to 6 large cloves of garlic peeled. - no vampires around here
Some chilis;
fresh poblano's- seeded and cut into strips.
dried ancho and dried pasilla- seeded and cut into small pieces
Adobo sauce - small can
Cummin 1 table spoon

Brown the pork
Toss in all the other stuff and simmer until fork tender ( falls off bone)
Shread with 2 large forks
Strain out the solids ( onion peppers.. ect)
Add solids plus some of the cooking liquid if the the pork is too dry.
Trash the cooking fat and liquid.
Put pork back in pot to keep warm
Serve with tortilla's and any toppings people like.

Now you could make this BBQ style something I learned after moving to Texas

Pot roast in the cooker?

Pot roast(rump roast)
One package of lipton onion soup mix
2C water
potatoes
carrots

Turn on and enjoy is 8 to 10 hours.
Pot roast was last night. We still argue about onions. I grew up with Vidalia onions as a staple in a pot roast, my wife didn't. After 14 years of marriange and eating Vidalia onionless roasts, I can say without a doubt you NEED THE ONIONS IN IT!!!!

Braised beef (pot roast)

1 Chuck roast
5 large Idaho potatoes peeled, cut in half (lengthwise and then each half cut into fourths)
couple handfuls of baby carrots
1 Large yellow onion peeled and cut into same size chunks as the potato (if you want onion, I skip this part because I’m allergic)

Salt and pepper both sides of the Chuck roast and then sear both sides of the Chuck roast in a skillet until a nice caramelization forms. Remove from pan. Add your potatoes, baby carrots and onion to the bottom of the crockpot and add water to about 1/2” from the tops of the vegetables. Place the seared chuck roast on top of the vegetables and potato mixture (you don’t want the meat sitting in the water). Close up the crock pot and cook for at least 4-6 hours. (Make sure it doesn’t run dry during the cooking). It will be some of the best pot roast you‘ve ever had, I can assure you.

I make it in a normal pot on the stove, and just simmer it for that length of time, but I have to watch and add water about every hour or so. ;)

That looks AWESOME! My experience of the chuck roast is you just toss everything in a slow cooker because it required no attention. Dump it all in before everyone leaves in the morning and it's ready to go at the end of the day. I'm gonna give this a shot while we're still all home.

This one can be done in less than 12 hours, but on low you could probably stretch it out. I've become obsessed with my Instant Pot so I'm trying this in the IP for dinner now. This was a huge hit when I made it for a local reef club meeting in January :)

Italian Beef

3-4 lb chuck roast, trim fat
1 pkg Good Seasons Spicy Italian Dressing mix
1 jar pepperoncini
1 jar Italian giardinera
14.5 oz beef broth
hearty rolls
provolone cheese

Chuck roast, seasoning mix, garlic, 1/2 jar each pepperoncini and giardinera, drained (adjust to taste) , 1/4 jar pepperoncini juice (again, adjust for taste) and beef broth in crock pot. Cook on low for 9 hours. Remove beef, shred and cook one more hour. (I have done this successfully on high in 4 1/2 hours total). Serve on rolls with provolone (better if the rolls are toasted but not a requirement.) Garnish with additional peppers and giardinera.

It’s essentially the classic French method for braised beef, it will blow your doors off! (I use RO water myself) The potatoes soak up the essence of the beef, and the carrots retain their bright flavor because it’s not lost in excessive water ;)

A cheater kalua pig:

Not tonight's dinner, but on the menu. It's brainless and amazing.

Take a pork butt, rub it down with sea salt. Best way is with real pink Hawaiian salt (the kind with the red dirt rubbed into it). Himalayan salt works too, but each salt imparts a bit of a different flavor.

stab the pork butt all over with a fork after rubbing it down with salt. sprinkle liquid smoke (I know, BLASPHEMY!!) on it and toss it in a slow cooker for 4 - 6 hours.

Make a big pot of rice.

Shred the meat up with a couple of forks.

Enjoy your budget luau.

Edit: don't forget the mac salad and cabbage

I am so going to get stuff thrown at me right now:p . I just don‘t like slow cookers or crock pots. Not sure why. (don’t get mad please @Katrina71 just me and I’m weird)

Anyway, we have almost same exact recipe. I use a Dutch oven. I add tomato paste, beef broth, and usually a merlot or Cabernet along with a bouque of thyme.

No anger here! I just need to utilize a crockpot on work days.

I’m not a slow cooker fan either, I was a chef for many years so it takes the fun out of it for me. But I also totally understand why people like them.

Julia Child knew what’s up ;)

When you and your spouse are walking out the door at 7 in the morning and not getting home until 6 at night, with the expectation of dinner on the table, the crock pot becomes your best friend! :D

Waiting for you to bust out Coq Au Vin. ;Nailbiting Only made that twice. Takes me forever

I honestly can’t remember the last time I made Coq Au Vin, it’s probably been 20+ years at least. These days I don’t cook much with wine anymore as I never buy it (I don’t drink). I’ve become a chef who deconstructs classic recipes into the bare essentials and makes the essence of the ingredients shine. It‘s developed from working in ultra fine dining where few people realize that the simplest things end up being the most elegant. Also these days since I mostly only cook for myself I tend to make my comfort foods. ;)
