SAUSAGE ZITI

I'm not big on regular meat baked ziti. It's the kind of food you expect at large catered events and usually dry and not overly tasty. However, make it with sausage, and a little creamier, and bam!

With the lock-down I've been doing more and more of the cooking. We've gotten into making dinners that we can get a couple dinners out of it. Tonight I'm making Sausage Ziti. HERE's the base recipe....and now my tweaks:

1. Mozzarella cheese - don't look for mozzarella in the artisan cheese section of your grocery store. First off, it's expensive (twice the cost), and the mozzarella you find in the dairy section of the store actually melts better for baked dishes. This is true for any baked mozzarella dish you make.

2. Most times I've made this I've mixed half and half, sweet Italian sausage and hot Italian sausage.

If I only use sweet sausage, I'll add 1 teaspoon of red pepper flakes. Adds a little zing to the meal.

3. I don't have fresh basil, so that is substituted with 1/4 cup of dried. I like my basil, so adjust to your taste. An 1/8 cup of dried basil would still work for most.

4. I like my ziti's a bit creamier, so I add 1 cup of ricotta to the sauce mix.

We are havin left overs. What started out last night as eggplant parma turned into a veggie lasagna. We only had 1 eggplant. After grilling it and some peppers we made a mistake of using a pan that was a bit big. So add grilled zucchini, bag of spinach and more herb ricotta. We had some TJ's quick lasagna no cook pasta noddles added for extra layers. Topped with a ton of cheese, we managed to fill the pan to the top.

Chicken breast with white rice and cilantro, avocado slices and greek pasta salad.
Chicken breasts marinated in thai sesame dressing. White rice steamed with cilantro and a hint of black pepper.
Greek salad : mini penne with olive oil, feta cheese, green/black/cherry olives and fresh parmesian tossed until well blended with feta crumbles and served.

Sweet Baby Rays grilled BBQ pork chops and corn on the cob. Bout to go start cooking as soon as the grill is warmed up.

Looking good! Have you tried grilling the corn on the cob? There are loads of recipes...husk on, husk off, in aluminum foil, etc. Here's my favorite because it's easy.....and good. Peel only the top one or two layers of husk. Pull off the exposed silk. Now fill a large pot with water and a bit of salt. Submerge corn in pot by taking a smaller pot filled with water and placing on top on the corn. Do this for a minimum of 15 minutes... But I typically do this for an hour or so without issue. Now grill on four sides, about 3-4 minutes per side....should see a good char on the husk. Let it cool a couple minutes, peel and butter, salt, whatever! Enjoy.

We had leftover venison enchiladas (because that's the meat we had in the freezer) with homemade tortillas and spanish rice. I don't have photos of it and I don't have a written recipe for the sauce, but it's tomato based with a little broth, cumin, paprika, black pepper, and chili powder, the spanish rice has a similar base but with more broth or a boullion cube and water depending on what you have. Tortillas start with masa flour and water to make a soft dough, press the doughballs into individual tortillas and cook on a flat pan. each tortilla is then coated in the sauce, meat and spices are cooked while the tortillas rest a bit to absorb the moisture. meat and cheese go into the tortillas and are rolled and put in the casserole dish. left over sauce poured over top then more cheese on top and bake at 350 for 20ish minutes till the sauce is bubbling and the cheese is browned. Then serve. I like black beans with my spanish rice, but we didn't have any in the pantry

Grilling Ribeye Steak (wafer thin) seasoned with argentinean salt and crushed black pepper. Side dishes are: 1) Grill white onions seasoned with crush black pepper and a bit of cayenne pepper to give it a kick, sprayed with olive oil so it doesnt dry out on the grill; 2) grilled kimchee with a tiny bit of sesame oil (^^) and; baked potato (on the grill) topped with loads of butter. Unfortunately, I'm no chef but it's the best I can do, locked down in the house cuz of Covid-19. Should be a yummy dinner though.

Edit... oh, and a cheap bottle of wine for myself. Wife doesn't drink.

Lightning Mac and cheese:

cook a pack of ramen according to the directions. Halfway add the spice packet. I like the chicken one for this. I only add half.

when it’s done cooking, drain the noodles almost completely. Add a bit of butter, some sour cream or ricotta or cottage cheese. Add about 3/4 cup grated cheddar cheese. Stir it up and add cheddar to make the consistency right.

season it up. I like Montreal steak seasoning. If you’ve got em, add some drained canned green chilies.

you can multiply this recipe. It’s not gourmet, but it’s really fast. Way better than box Mac and cheese.

I grate fresh parmesan on top and plenty of fresh cracked pepper.

I’ve been craving a burger for over a month now, I had groceries delivered yesterday and got some ground chuck (80/20) and some burger buns. Tonight was burger night, but instead of using one of the buns I decided I’d make a Grilled Cheese Cheeseburger... It was AMAZING and really killed the craving!

Sweet and sour chicken:

i like to use boneless chicken thighs, but you can chop up what you want. Imagine what you get at your local take out joint.

Season flour with garlic powder, salt, and pepper and whatever else you feel like adding. Toss chicken chunks in the seasoned flour.

while that’s all going down, cook down some chunks of onions and green pepper. When they are cooked down, add chunks of canned pineapple. Once cooked, remove the mix and prepare to add the chicken.

add some oil or fat, or whatever you do, and cook your chicken. Add some minced garlic towards the end and remove the chicken.

Make the sauce: roughly 3/4 cup apple cider vinegar, 1/2 cup brown sugar, 1/2 cup white sugar, and half cup of the pineapple juice from the can. Add a couple tablespoons of soy sauce. You can adjust the sauce to your tastes. Whisk it up smooth and add it to the pan and bring it to a simmer. Add everything into the pan and let the sauce thicken. Serve over white rice.

I mix it up, but I’m mostly on a cheeseburger diet. Looks amazing.

Buffalo shrimp. I broke out the fryer. My doctor said just my bad cholesterol (ldl) was almost maxed out. I’m 177, I think he said it goes to 185, so I took it as a challenge :p

Shrimp, dredge in flour, egg, and flour. Rest in fridge 20 min. 1cup Texas Pete hot and better as needed to mild (for wife) with garlic, onion, and cayenne powder added. Fry, toss, and eat.

Coconut chicken here. We take chicken tenders and coat them with an egg wash then dredge in a mix of 50/50 coconut flakes and flour. Bake at 400* for about 15 minutes. Drizzle with a little melted butter and cook for roughly 5 more minutes or until chicken is done.

Just had to share this recipe for pork belly burnt ends I made last night for dinner. Posted in the BBQ thread, but no recipe.

3 to 4 pounds raw pork belly cut into 1/2 to 1/4" chunks.
Coat with favorite dry BBQ rub.
Smoke for 2 1/2 to 3 hours
remove from smoker and place in foil pan. Coat with 1/2C brown sugar, 1/2C honey, and 1/2C butter
Cover in foil, return to smoker for 1 1/2 hours
Remove from smoker, drain juice in pan, coat in finishing glaze, return to smoker for 15 minutes to "set" the glaze.
(Finishing glaze recipe: 1C BBQ sauce, 1/2C Apple juice, 1/2C apple jelly, 1tsp franks hot sauce, 1tsp dry rub used in first step. Cook in saucapan to reduce by half).

Any simple crockpot recipes that cook in 10-12 hours? No soups...working mom trying to multitask.
My wife makes chicken enchiladas/toco's in the crock pot, simple and good for a couple of days.
Chicken breast
toco seasoning
can corn
cup or 2 of water
cook until you can shred/pull chicken, serve on Flour tortillas with all the fixings
