So... Snails die and leave their shells... Do I take them out or leave them for other snails etc? Do they actually move shells or do they not generally make it that long? I clearly don't understand this, but I really don't want to leave my little cleaning crew hanging.

Snails grow their own shells. So you can take them out or leave them.

As said, the snails grow their own shell - they don't need other shells at any point. That said, leaving the shells in the tank won't hurt at all, and if you add any hermit crabs (which don't grow their own shells), then they can use the old snail shells.

I do have hermit crabs. So I will leave a few for them.

I'm now wondering why I didn't know snails grow their own shells.

Cause you don't know how snails work?

Leave all the shells. They contain nutrients that the tank will use in the long run.

I clean ‘‘em bleach ‘‘em and keep them for hermits later on. I’ve got a baggie full of different sizes shells I collected over the years , I use them in different tanks and give some away, there are always people looking for shells for their hermits.
