So I buy my RODI from my local LFS.

Copper is bad for some fish as they are sensitive to it. And as someone else pointed out bad for inverts.

Some people go extreme for testing. But really nitrates phosphate and dKH are things you should test for. Mag and calcium if you have corals is helpful.
I won’t be going extreme on testing in any way but I do believe I could get some ph and dkh testers have you used or heard anything on the hanna testers iv seen em everywhere

I test phosphate PO4
And alkalinity dKH
I do not test PH
I have my LFS test mag and calcium when I go in
I also send a sample off to ATI every once and awhile

there are some more photos of the tank without the blown out blue
Honestly my opinion is if it ain't broke don't fix it. Your tank looks good. Keep doing what you're doing (with the understanding that that Haitian could at some point start munching your fish)

It looks like you have a bleached C. gigantea initially. He got healthy up and start to have a lot of zooxanthellae, which is what give him the brown color.
He is fine and just get healthier.
