Hello! I have a 60g cube (24inch*24*24) with around 2 inch of sand bed. Would 1 noopsyche k7 pro 3 be enough?

Probably, I have no experience with that exact fixture, but it is big enough and should be powerful enough based on what the manufacturer says.

Yes, I think it should be fine. If it turns out that you want more then you can add a second when you get to that point.

I have a waterbox 35.2 at 24L x 14ish w x 19 h and it’s more than enough. If anything I fish it was a touch less intense so I could have a higher par separation between top of rock work and the sand bed

The lights are "rated" for a 24" * 24" spread. It should work but you're going to be at the maximum so you may end up with some darker spots in the upper portion of the tank.
