i have a small harlequin shrimp I ordered about a month ago to wipe out my asterina starfish.

Is it alright for them to just have one type of starfish to eat or do they need a variety every once in a while?

no variety needed. They can live on chocolates or asterinas exclusively (or at least several years...so probably exclusively) but they eat a lot so you must keep them well fed. I have one bigger one and he can finish a choc chip in 1 week himself. He also wiped out hundreds and hundreds of asterinas in just 2 months, so please know that once the asterinas are no longer visible you must supplement his feeding.

FYI i also find that choc chips last longer than fromia or tile starfish (not to mention a lot cheaper).
