Wow I had to google yakitori and I'm a classically trained chef! Never payed much attention to names when we were learning about oriental food, just not my wheelhouse.

In US terms, speedies! Skewered, seasoned chicken cooked over a fire.

It's never too cold to smoke meats! Hogwash! I've smoked a pork butt at 20 below 0 before. Just need a good insulated blanket on your smoker.

Here is a prime rib on the top rack, which was basting a brined turkey in the bottom rack of my Weber Smokey mountain over the holidays. To say the meal was divine was an understatement.

The BBQ Guru temperature controller makes setting the smoker temperature an absolute breeze!

I grill all winter pretty much every week. Grilling out this weekend and a high of 15.
I just do not usually smoke stuff in the winter much.
I shift more towards gas and my griddle.
I will use the charcoal too sometimes. Just shortened daylight makes it harder sometimes.

Pizza is our new flame over here.. unlike reefing, cooking never gets ya in the doghouse with the better half!

I am going again on Saturday. I got a new load of oak and I forgot to take the membrane off of my ribs the last time, so they kinda sucked and I have been mad at myself and need to redeem. KC Style Brisket and ribs for the Superb Owl.

I got a cheap slicer and this has helped a lot at my house... sandwiches, just pieces out of the fridge, etc. I should have gotten one a long time ago.

is that wood burning?
It's the Alfa "One" they make it in a gas or wood version.. We got the gas for our small oven to make it more portable and easier.. We have a much bigger non portable wood fired oven and after having both we hardly ever fire the wood oven any longer unless we are cooking for a large crowd

I was kind a looking at pizza ovens so that’s good to know.

Got myself a Big Green Egg for Christmas, I have been gilling every weekend.

Last project was maple cured porkbelly aka bacon. Wow the flavor is great and a much better of a product than I have smoked before.
