I actually smoked some steelhead the other day (brought work home).
That's what I'm making right now. Good luck with your first attempt! Went to the local butcher and bought a 4.5lb rack. It's still on the smoker. I smoke mine at 225 till it hits 202 and then wrap it for an hour while it rests. I spritz with apple cider vinegar and apple juice mixture after the first 3 hours every hour till it's done.BBQ starting tomorrow. First try at beef ribs.
Man I wish I could keep steelhead. They don't even let us take them out of the water in Ak.
