Looks good.
Right before winter I had some bad luck with Costco ribs. I opened them and they smelled like Sulfur. they really stunk.
I have had such good luck with their meat before and now I am a little worried. No good butchers anymore around by us so Costco was my kind of go to but that was so bad. The last good butcher went out of business right before Covid and they still were a long drive.

Did some Reuben sandwich's on the griddle this weekend with left over corned beef from ST Patrick's day
By the way this griddle is amazing. Such even heat.

We also did some tuna and salmon with a molasses glaze and coriander rub.
No pics of the Salmon.

I actually smoked some steelhead the other day (brought work home).

Couple of hours on 200 degrees with apple chips, presoaked overnight with salt\brown sugar brine, basted them during the smoke a few times with maple syrup.

That's what I'm making right now. Good luck with your first attempt! Went to the local butcher and bought a 4.5lb rack. It's still on the smoker. I smoke mine at 225 till it hits 202 and then wrap it for an hour while it rests. I spritz with apple cider vinegar and apple juice mixture after the first 3 hours every hour till it's done.

Going to try the 321 method. Do you use a water pan as well?
