They will eat asternia stars, but are not very nutritious for them. They can decimate a very large population of asternias rather quickly. Think of them as you would a mandarin with pods in how they would decimate an asternia population rather quickly.
What they actually eat is the tube feet of the star(the nutritious part for them), and asternias do not have a lot of tube feet for them to keep them sustained long term.
Also if you have urchins, they are on the menu, and would probably be taken out before the asternias. They have the same tube feet as stars.
I used to buy mine chocolate chip stars, but they eventually perished after a few years, and I have never bought another.
