We picked up a red sea reef mat 1200 and it says it's rated for a flow up to 2300 gal per hr. We are running a pump that has an output of 3200 gph. Other than using more mat would there be an issue anyone can think of? Thanks in advance.

If that 3200 gph of water flow is what is stated on pump then no problem for sure. If you go and measure a real flow i bet that it will be a half or less of that max pump flow what is stated on it. Head takes a lot, piping, elbows etc ..
Beside, if you really have too much flow you would notice it so far. Its not in how much roll it use but there is a physical limit and if you pass that device will overflow. Everything else is fine imo
