I have a 75 gallon tank with sump that holds about an additional10 gallons of water. I have a classic 150s skimmer. Do you think it is oversized for my system. If so should I run water in the sump at a higher or lower level to help it or just keep it at the 7” level. Seems like it either runs really wet of really dry.

If your tank is really lightly stocked and you don't overfeed it might be a bit oversized, but on the flip end, if your 75 is heavily stocked and heavily fed, it might be just right or maybe even undersized. I would keep the height at whatever level the manufacturer recommends and run it on the drier end.
