I had exact same issue.
They are a little finicky initially but once dialled in you will love it.
I had some great advice which I've screenshot.
Hope it helps!

Thanks I’ll give it a go as I have air and water fully open at the moment as per the book that comes with it

Do what he said. Set it in about 8" of water. Water tube almost all the way open. Air all the way closed and then SLIGHTLY crack it. Get the foam to rise to the bottom of the cup and then leave it. When you make air adjustments wait 3-5 minutes before making another. Unless it starts overflowing right away.

When you says the water tube, do you mean the whole tube or just the know at the top? The whole tube adjusts an opening at the bottom while the knob seems to fine tune at the top of the tube. I'm having the same issue, whatever I do the bubbles are WAY too high and the cup is full of water within seconds...

The whole tube. And the top as well. I have the bottom opening completely open and then the top one as well.
