I am hoping @theatrus and others can chime in, I know he has built some and I finally got fed up and bought some real DS18B20 to build myself. I think the ones on Sparkfun - https://www.sparkfun.com/products/11050 are quality units but they are always on backorder so I decided to make some myself. My main question is do you pot the whole chip in epoxy or just use it to seal up the enclosure. I have been having issues with some probes, even when sealed with silicone still have had some that water is getting into them. I am just going to print some pteg cylinders and put the chips in that but wanted to know if you pot the whole chip or just seal the top.

No practical experience about that on my part, but I would expect that, if you only potted the contacts of the chip, that the interface between the silicone/glue and the chip will be the weakest link and the first point of entry for water.
