I have been using a Volka/ Vinegar dosing and it has worked great except that it has turned my sump into a slimy mess, I use a roller matt and the slimy mess totally negates it with all kinds of particles just returning to the main tank.

I'm looking for any suggestions.
There isn't a way to stop the slim from building up in the sump-dosing carbon.

What are the downsides of bio pellets,

Sulfur denitrators other than the alkalinity depletion imbalance

Why Do you want to use them? Many successful tanks RUN without them. I have kept reefs since the 1980 s and NEVER have used one or the other. Good skimmer and Carbon with water Changes 10 percent every two weeks have served me well. I run reef octo skimmers with EHEIM filters and a large sump with GREAT results. Just My two cents , GOOD LUCK!

What is you current nitrate and phosphate?

Ever try vinegar alone?
Just tested my,
No3 is 75~100
Po4 is ~1.0
I cut the does back at the end of April because my numbers had dropped to my target numbers, Time to go back to my previous dosing amounts and does some Lanthanum Chloride to get my Po4 numbers back in order.
Water change and cut back on my feeding

No, I have not tried vinegar alone, what would be the equivalent does going from NoPox to straight vinegar alone

I’m not sure there is an exact conversion, but starting at 4 times as much vinegar as the NOPOX is a reasonable plan.

Sulfur denitrators certainly can work, but deplete alk.

Pellets are hard to adjust the “dose”.
