Just bought home a RedSea reefer 250 g2 and am in the process of getting the plumbing put together now.

We plan on installing both a reef mat and a skimmer on this system, and part of me thinks it would be easier to connect it all now in the very beginning before getting water in the system. Should I plumb it for the reefmat while it's dry, or wait until everything is cycled for a while?

I would plumb it now while there isn't any water in the system. Just leave the paper out of it until you are ready for it.

I didn't even think about not putting in the filter roll at first. I feel silly, that's perfect! Thanks!
