A few weeks ago I found a dime in my tank that had been rusted pretty badly so I decided to throw in some cuprisorb preventatively (it was cheaper than an ICP). Is it a good idea to keep this media running to ensure all the nasties are out, or do I risk any harm by removing things that are good and stripping the water of trace elements?

Agreed. The downside to all metal binding methods is that they can reduce things you want as well as things you do not want.
